This week I posted a picture of my favorite Peruvian dessert "leche asada" on my social media page. While the original recipe is cow milk and sugar I managed to make it with coconut/almond milk and sweetened condensed coconut milk . It turn out delicious!!

Here's the recipe:
4 cups coconut/almond milk
1 cinnamon stick
2 can sweetened condensed coconut milk
2 tablespoon vanilla extract
Pour the milk in a pan and warm it with the cinnamon stick. Wait until the cinnamon releases its aroma, then remove the stick and let it chill.
In a bowl or blender mix milk, condensed milk, and vanilla extract. At this point you can try it and if you need more sweetener you can add it now. I don't like desserts that taste too sweet but this is up to you. Add the eggs and mix well. Then strain the mixture and pour it in individual bowls.
Place the individual bowls in a rectangular oven safe dish and add water until half of the individual bowls are covered. This method is call "baño maría" in Spanish, I think in English its called a water bath.
Preheat your oven to 350 degrees and set the rectangular dish in the oven for 45 mins. Then broil them for 10 additional minutes. If you don't have the broil option on your oven raise your oven temperature.
