Quinoa Juice
I want to share with you this amazing Peruvian recipe. In Peru it's very common to drink warm quinoa juice for breakfast. It's filling, delicious and super healthy. I have modified the recipe a little because some ingredients are difficult to find here in AZ.
Quinoa grows in the Andes Mountains and for millennia it has been a food staple for the native people there.
Quinoa, often described as a superfood, is packed with protein, fiber, iron, thiamine and B6. It's also an excellent source of magnesium, phosphorus, manganese and folate. It's gluten free, low in cholesterol, anti-inflammatory nutrients, and much more.
So let's eat/drink quinoa to improve our health.
INGREDIENTS
3 liters of water
7 oz of quinoa (wash it very well until you see the water runs clear)
1 whole pineapple (cut it into small pieces and save the skin)
2 apples (cut them into small pieces and save the skin)
5 tbsps. of Coconut sugar (or sugar of your preference)
6 whole cloves
5 cinnamon sticks
INSTRUCTIONS
ln a big pot warm water, sugar, pineapple skin, apple skin, cloves and cinnamon.
Cover it and let it cook on medium heat for about 20 minutes.
Remove the fruit skin, clove and cinnamon sticks.
Add the pineapple, apple and the quinoa. Cover it and let it cook for about 30 mins.
Remove from the heat and with a hand mixer or blender mix it all together.
At this point it is all done!
If you like a thicker consistency, you can add two tbsps. of corn starch.
Add sugar if you prefer a sweeter taste.
Here in AZ its to hot, so I wait until it cools off to drink it cold. It is delicious! You need to try it.
