Peruvian Causa (layered potato dish)

Hello everybody!

I am writing from beautiful Peru! Kiara and I are having a blast! Kiara is in Peru for first time and she is loving the food and enjoying time with her Peruvian family.

Today I want to share a recipe that is delicious, healthy and super famous in Lima Peru.

PERUVIAN CAUSA (LAYERED POTATO DISH)

Causa is the name of a very famous dish in Peru. Causa can be found in every corner of the country. I don´t think there is one single Peruvian who doesn´t cherish this dish.

It is all about the potatoes and aji amarillo. You can prepared Causa with different fillings such fish, chicken, shrimp or just vegetables. I am going to give a little twist to the original version of this recipe to make it healthier.

To make it, you can use yellow chili paste as an emergency substitution if you can´t find the fresh or frozen Aji­ Amarillo. This can be found in many supermarkets and grocery stores, or you can buy it online. I would recommend you to add the mixture to the potatoes little by little because for some it could be too spicy.

INGREDIENTES

  • 5 Potatoes

  • 4 Aji amarillo seeded and deveined or 2 tablespoons of yellow chili paste

  • 1/4 cup fresh squeeze lemon juice

  • 1 tbsp. olive oil

  • Salt and Pepper to taste

FILLING

Vegan version Meat version

Steam your veggies Shredder salmon, shrimp or chicken

  • 1 cup broccoli Plus all the veggies from the

  • 1 cup carrots vegan version

  • 1 cup tomato

  • 2 avocados

  • salt and pepper

GARNISH (optional)

Red peppers

Spinach leaves

Black olives

Boiled eggs

DIRECTIONS

1. In a blender add the aji amarillos and lemon juice. Blend until well mix.

2. Boil your potatoes, peel them and mash them in a big bowl. Add salt and aji marillo mixture to taste. Mix all together with your hands. Set aside.

3. FILLING. In a bowl add avocado, carrots, tomato, broccoli salt and pepper to taste. Mix well.

4. With a small cake ring or in a rectangular oven tray lay the potatoes add avocado slices and the vegetable mixture. If you are preparing this dish with meat now is when you need to add it. Add one more layer of potato. Garnish.
