Fruit, chia seed jam

Hello!

Christmas is here!!! A few days ago I was making cookies with my daughter and I thought that I would like to add some fruit jam on the cookie instead of frosting that is full of sugar. I searched online and I learned that a sandwich cookie with jam is called a linzer cookie. Then I was thinking about making linzer cookies with natural fruit jam. Humm!! Then I thought.... I need to prepared the jam first!

This recipe is super easy and healthy. You are not going back to buy sugary jam at the groceries stores after you try this jam.

Now that we are in the holiday season it could also be a good present for your family and friends.

INGREDIENTS

  • 2 cups berries or fruit of your choice (peeled, seedless and cut in small chunks)

  • 1 tbsp fresh squeeze lemon juice

  • 1 1/2 tbsp chia seeds

  • 2 tbsp maple syrup or sweetener of your choice

  • glass jar

  • ribbon

DIRECTIONS

1. Place the fruit in a pan over medium heat and simmer for about 8-10 minutes.

2. With an electric mixer or mash tool mash until desired consistency.

3. Add lemon juice, maple syrup and chias seeds and cook for about 5 more minutes.

4. Let it cool, then place it into your glass jar.


You can keep it in the fridge for up to 3 weeks or freeze it. This jam is delicious, you can eat it with toast, pancakes, oatmeal, yogurt, or add it to linzer cookies.
