Carrot, coconut muffin

Happy Holidays everyone!!

After we got back from our holidays Kiara and I got sick :(

After almost a month I am back on my own self. Thank god!!

Now we are working on our Christmas trees and decorations. On my next post I am going to share some DIY Christmas decor. Don't miss it!!

Today I am sharing Kiara's favorite muffins.

This carrot muffin is full of coconut, walnuts and lots of carrots!! Let's do this!

I really sorry about the missing D in the word shredded on the video. I guess I am still learning English :( and unfortunately I could not go back and edit the video.

INGREDIENTS

Dry ingredients

  • 1/3 cup wheat flour

  • 3/4 coconut sugar

  • 1/2 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp cinnamon powder

  • 1/4 salt

  • 1/4 walnuts (chop)

  • 1/2 cup shredded coconut

Wet ingredients

  • 1/2 cup coconut oil

  • 2 eggs

  • 1/2 tsp vanilla extract

  • 1 small apple (grated)

  • 3 shredded carrots

DIRECTIONS

Preheat oven to 350 degrees F.

In a large bowl whisk together the flour, sugar, baking soda, baking powder, salt and cinnamon powder. Stir in the nuts and coconut.

In a separate bowl whisk together the eggs, oil and vanilla extract. Stir in the grated carrots and apple.

Add the wet ingredients into the flour mixture, stir just until moistened. Do not over mix!!

Divided the batter between the prepared muffin cups and bake for 20 mins or until a toothpick inserted in the center comes out clean.
